Sweet Potato Sushi Rolls
You must try these delicious sweet potato sushi rolls from the Kitchen Twins.
What you’ll need:
- Nori sheets
- This number will depend on how many rolls you are making
- Sweet potato, avocado, cucumber, or any other fillings you want
- Sushi rice
- Cooked according to directions on package. Again, this amount will depend on the number of rolls you are making
- For two people, use one cup of rice
- Rice wine vinegar
- Cooked according to directions on package. Again, this amount will depend on the number of rolls you are making
To make the rice:
Cook rice according to directions on package
Let it cool
Add 1 1/2 tablespoon rice wine vinegar for every one cup of dry rice
Let set then fluff with a fork
To make the sweet potato filling:
Cut off ends and peel
Cut in half both ways then cut into thin strips
Lay on a baking sheet lined with parchment
Coat with oil, salt, and pepper
Bake on convection at 375 for 35 minutes
- Flip halfway, may need longer in a regular oven
If you want to use other fillings such as avocado, cucumber, crab, tuna or salmon:
Cut the raw vegetables into small, thin slices
Cut the raw SUSHI GRADE fish into small, thin pieces
To make the sushi roll:
Using a sushi roller, put your nori shiny side down
- If you don’t have this bamboo roller, you can do free form just make sure to press down the rice extra well before rolling.
Spread the rice until it almost reaches the ends and press down in an even thin layer
Add your fillings about 1/3 of the way up
- Make sure not to overstuff
Then roll it and press down after the nori rolls over the fillings
Squeeze tightly so it sticks together
Cut from the middle out using a serrated knife
- Each time you are halving a piece until 8 pieces are made
Top with ginger, wasabi, soy sauce, or yum yum sauce and enjoy!
